......and some arugula just about to not be edible. So I looked in my pantry and grabbed some penne pasta. I also had a tomato sitting on the counter. I cooked the sausage and when it was finished I turned off the heat and added the arugula to wilt it a bit. I also added a bit of chopped garlic. I chopped a tomato and sprinkled it with salt. After the pasta was cooked, I tossed everything together with a drizzle of olive oil and just a bit of the pasta water. And finally, because I like it spicy, a sprinkle of red chili flakes......
Tada! A pretty good lunch for not having any food in the house.....and it only took about 15 minutes.
