Caribbean BBQ for Memorial Day weekend!

Mango Mojito
boil water, sugar and mint bunch until syrup is infused 15-20 minutes
In a shaker, muddle chopped ripe mango with the juice of a lime and a teaspoon of sugar. Add ice. Add rum.  Add simple syrup. Shake.  Pour into a glass and top with soda water and a sprig of mint.

Plantains must first be put in very hot water for about ten minutes so the skins peel off.
Then, cook in brown sugar and butter until carmelized.

Ribs marinated in brown sugar, cayenne, olive oil.  Brown in a cast iron skillet for 5 minutes on each side. Then cook in a 350 oven for  40 minutes then reduced to 200 for another 2 hours or so.

Marinated in jerk spices and grilled. Mango salsa is one chopped mango, 1/4 red onion, one jalapeno,  teaspoon  brown sugar, chopped cilantro, lime juice
