Homemade Eggplant Pizza

 Trader Joe's has great pizza dough if you don't have time to make your own.  They have a good sauce too.  Slice eggplant thin and drizzle with olive oil.  Cook in a pan.  After the crust has cooked on its own,  add the sauce, cheese and egplant.  Cook until cheese is bubbling in a 400 degree oven.  After pizza is done cooking, top with chopped, fresh basil.

Old bread? Make breadcrumbs.

Don't throw away your bread just cuz it's gotten a little too hard.  Do throw away if covered in mold ;) If you don't have ducks to feed like we did with our old bread when we were little, put it to good use and make bread crumbs.
Bread crumbs have many uses....to coat meat and chicken before baking, in salads, to add texture to roasted vegetables, in pasta for a bit of crunch, on top of mac and cheese......


Break bread into pieces. Spread onto a cookie sheet.  Toss in olive oil, salt and pepper and bake until brown and crunchy.

Seal them tightly and use them in tomorrow's dinner....

This Documentary convinced me to juice: Fat, Sick and Nearly Dead

Joe Cross if fat. Joe Cross has a skin condition. Joe Cross takes many, many meds for several problems. Joe Cross is sick of it.




He figures if the body heals itself when you get a scrape, why shouldn't it be able to heal itself from disease?

He sets out on a diet to only eat micro-nutrients, basically vegetables and fruit.  He juices an amount of vegetables one could only hope to eat in several days into one glass.  These several glasses a day make up his diet.

Now, I'm not saying do a 60 day juice fast, but it got me thinking..... I  def do not consume enough vegetables.  My plate is never brown and white like most Americans, due to most only eating starch and meat.  My plate usually contains some fresh vegetables of the green, red or yellow color.  But I really enjoy my meat. AND my potatoes and my veg section is usually the smallest one on the plate.   I also tend to get colds pretty often.  My immune system isn't the greatest when it comes to the sniffles, a cough etc. So....I have decided to juice everyday this week.  I am going to cut out a meal and drink several glasses of kale, tomatoes, spinach, fruit, whatever!

This weekend I juiced an entire bag of spinach, a tomato, 1/2 a bag of carrots and some ginger. Not bad. Tastes pretty good actually.  And how long do you think it would take you to eat that many veggies?  A few days? A week?
Yesterday,  I juiced two huge bundles of kale, beets and 1/2  a bag o' carrots.  Today I also juiced 2 oranges, 1/2 a grapefruit, a banana ( i hate bananas on their own) half a lemon, some carrots and a bit of ginger.





Juicing is pretty fun and when you think of all the nutrients you are consuming, you know you are doing something great for your body.  WOOHOO!  Bring on the health!

Usually on weekend mornings the boyfriend and I will juice carrots, oranges, celery and whatever other fruit we have in the house.  Carrots make the juice sweet and work well particularly with greens.  Check out many juice recipes here from the documentary:  RECIPES

Filming America's Best Bites!

One of my amazing friends, Natalie Forte has my dream job.  She is the host of a soon-to-debut tv show called America's Best Bites.  It debuts on the CW the end of this month, so be on the look out. I was lucky enough to be invited to film a segment with her in our Venice neighborhood.  We filmed at a local taco/rotisserie spot called Benny's. At Benny's, everything is made fresh (the tortillas are ahhmazing!), the meat hormone and antibiotic free, the chickens free range and the veggies organic!  Not to mention the fact that Benny the owner is a super nice guy :)

We tried the lobster tacos......duuuuuude, I was not expecting what I got.  The taco (in the freshly made tortilla, derrrrr) was bursting with chunks of lobster.  I'm talking knuckle sized chunks.  It was literally falling out of the taco. Not like those tacos where there is so much cabbage and pico de gallo garnish you find yourself wondering where the meat is hiding.  The best part  (in addition to the actual lobster) was that the meat was cooked perfectly.  Not rubbery and overcooked but tender and delicious.  We squeezed it with lime juice and chowed....I know I was supposed to talk on camera but I really just wanted to eat.  It was really, really yummy and I will go back for sure.  I'm so proud of Natalie and know she is gonna rock this show, I just wish I could eat with her in every city ;) Be sure to check out America's Best Bites when it debuts! My swimsuit line!

......finally has some finished pieces.  While we haven't done the "real photo shoot" yet, I really wanted to get them on etsy so I had a few pics taken.

I had nothing in my fridge except a sausage.....

......and some arugula just about to not be edible.  So I looked in my pantry and grabbed some penne pasta.  I also had a tomato sitting on the counter.  I cooked the sausage and when it was finished I turned off the heat and added the arugula to wilt it a bit. I also added a bit of chopped garlic. I chopped a tomato and sprinkled it with salt.  After the pasta was cooked, I tossed everything together with a drizzle of olive oil and just a bit of the pasta water.  And finally, because I like it spicy, a sprinkle of red chili flakes......

Tada!  A pretty good lunch for not having any food in the house.....and it only took about 15 minutes.
