Yummy side dish

I used to be scared to poach eggs because I never realized how easy it is.  But it's super easy so don't be skerrrrrd.....The secret is vinegar.  Just a splash into simmering water helps the egg to congeal faster.  Boil a pot of water then reduce to a light simmer.  Do Not put the egg in boiling water. Crack an egg into a ramekin, small bowl or something with a lip.  Stir the water in a clockwise (or counter if you're so inclined) direction so  you are almost creating a funnel in the middle.  Pour the egg directing in the center of the swirling water.  The swirl keeps the egg from going all over the place.  Repeat. The eggs only need about 2 minutes then take them out with a ladle or slotted spoon.  Salt and pepper.  

Grill some asparagus (or place them under the broiler) Drizzle with olive oil and season.  After about 8 minutes (you want them to have a little snap and not be mushy so do not overcook)  take them out, top with the poached egg and add some shaved parmesean.  Done.  It looks pretty and taste great.  I wish I had some parm for my photos!
